The mouthpiece with rings is a variant of the double-jointed bit. The rings in the middle stimulate the horse to play with the bit which increases tongue activity, which means that a horse will produce more saliva and can relax the jaws more, which means that the horse will let go in the mouth sooner.
The Sweet Iron bits are made of steel and have a recognisable blue colour. Sweet Iron develops surface rust through contact with (air) humidity, which tastes sweet and naturally stimulates the horse's saliva production. This will make the horse foam more, which ensures better acceptance of the bit. This rust process (oxidation) changes the blue colour of the Trust bits to brown-gray.
